How to prepare cold pasta with bresaola, arugula, and parmesan
Cook the pasta in plenty of salted water for the necessary time, then put it under a stream of cold water to stop the cooking.
Pour the pasta into a bowl and season with a drizzle of extra virgin olive oil, stirring.
Meanwhile, wash the arugula and then add it to the pasta. Also cut the bresaola into tagliatelle-like strips and add.
Finally, use a vegetable peeler to slice the parmesan, then season with extra virgin olive oil, mix everything well, and place in the refrigerator for a couple of hours.
Cold Pasta Storage
Cold pasta can be stored in the refrigerator for up to two days, covered with plastic wrap. Beyond this time, the pasta will become increasingly sticky due to the release of starches.
FAQ (Questions and Answers)
How do you cool pasta?
The quickest way to cool pasta is as described in the recipe, by putting it under running water, but this will remove the surface starch layer, also reducing the pasta’s flavor.
Alternatively, once drained, you can season it with oil and then spread it out on a baking sheet covered with parchment paper, and wait for it to cool naturally.
