The crazy tart with mixed vegetables is ideal for impressing everyone. A simple yet tasty preparation, it can be served as an Appetizer, Aperitif, for a Standing Buffet by making single portions. The base is made with crazy dough, it’s butter-free, light, and crumbly; it doesn’t require hours and hours of rest. Instead of butter, I used IGP Tuscan extra virgin olive oil with a good fruity flavor, and it’s also rich in beneficial properties like antioxidants and monounsaturated fatty acids. In the kitchen, it is versatile and can be used in various preparations, with or without cooking.

Ingredients
- 2 cups all-purpose flour
- 3.5 oz water
- 3 tbsp extra virgin olive oil (IGP Tuscan)

- 2 potatoes
- 1 zucchini
- 3.5 oz peas
- 2 oz scamorza cheese
- to taste extra virgin olive oil (IGP Tuscan)
- 1 clove garlic
- 5 oz heavy cream
- 2 eggs
Steps
In a large bowl, place the flour, then pour in the water, salt, and IGP Tuscan extra virgin olive oil, and begin mixing the ingredients with your hands, first in the bowl and then transfer to a work surface.
Knead vigorously until you form a soft and elastic ball, at this point cover it with plastic wrap and let it rest for half an hour at room temperature.
Meanwhile, peel the potatoes and cut them into chunks, do the same with the zucchini.
Sauté the vegetables in a pan, first the potatoes and then the zucchini with a drizzle of oil, then add the peas and season with a pinch of salt, cooking for another 6 minutes.
Roll out the dough with the help of a rolling pin, transfer it to a 9.5-inch pan lined with parchment paper, sprinkle it with breadcrumbs, then pour in the cooked vegetables.
In a separate bowl, beat the eggs with the cream and pour over the tart, then bake in a static mode oven at 355°F for 30-35 minutes.
Storage and Variations
It’s possible to store the crazy tart with mixed vegetables in the refrigerator until the next day, adding other vegetables or replacing them according to your tastes. You can also add diced speck or bacon.
