Ingredients
- 12 oz fresh pasta
- 1/3 oz basil
- 1 3/4 oz Parmesan cheese
- 5 oz unsalted pistachios
- 1 to taste lemon
- 1/2 cup fresh liquid cream
- 1/2 cup extra virgin olive oil
- to taste salt
- to taste pepper
Steps
In a large pot, bring plenty of salted water to a boil with a drizzle of olive oil and cook the tagliatelle.
Meanwhile, place the washed and well-dried fresh basil, grated Parmesan cheese, pistachios, salt, and pepper in a mixer.
Start the mixer and gradually pour in the extra virgin olive oil until you get a creamy pesto.
At this point, drain the pasta, but not too much, and pour the tagliatelle into a pan, adding the pesto, cream, grated lemon peel, and mix everything well.
Immediately plate your fantastic creamy tagliatelle with pistachio pesto while still hot and sprinkle with pistachio granules.
Storage
