Crunchy Zucchini and Potato summer recipe, easy and tasty, inspired by the classic crunchy zucchini ready in 10 minutes that I prepared last year, but with an extra touch.
It’s made by grating zucchini and potatoes, while flour, water, salt, and oil are mixed separately.
A yeast-free and egg-free recipe, very simple to make with a simple whisk and then straight into the oven!

Ingredients
- 1 zucchini
- 1 potato
- 1.69 cups water
- 1 tsp salt
- 2 tbsps extra virgin olive oil
- 1/3 cup Parmesan cheese
- 2 cups all-purpose flour
How to Make Crunchy Zucchini and Potato
First, trim the zucchini at the ends, then grate them with a coarse grater, and set aside.
Do the same with the potato and set aside.
In a large bowl, pour the water, oil, and salt, then add the flour little by little.
Mix very quickly until a smooth, lump-free batter forms, then add the well-squeezed zucchini and potatoes.
At this point, oil and brush a baking pan of approximately 9.5×5.9 inches or cover it with parchment paper. Pour the mixture, and finally sprinkle the surface with grated Parmesan cheese.
Bake in a fan oven at 374°F for about 40-45 minutes.
Storage of Crunchy Zucchini and Potato
It can be stored in the refrigerator in an airtight container for up to two days. It can be reheated in a skillet or in the oven using the grill function.
