  • 1.7 cups water
  • 2 cups all-purpose flour
  • 1.5 tsp salt
  • 2 tbsps extra virgin olive oil
  • 0.25 cups grated Parmesan cheese

  • First, trim the ends of the zucchinis, then grate them with a coarse grater, and set them aside.

    In a large bowl, pour the water, oil, and salt, then gradually add the flour.

  • Mix very quickly until you form a smooth batter without lumps, then add the well-squeezed zucchinis.
