Ingredients
- 10.5 oz eggplants
- 1 egg
- 1/3 cup breadcrumbs
- 1/3 cup Parmesan cheese
- to taste salt
- to taste garlic powder
- to taste flour
- 1 cup tomato sauce
- 1 clove garlic
- to taste extra virgin olive oil
How to Make Delicious Eggplant Meatballs in Sauce
First, wash the eggplants, cut them into slices and then into cubes, all of the same size.
Pour into a pan with a drizzle of oil, salt them and cook for at least 10 minutes with the lid on.
Remove the eggplants from the heat, transfer them to a bowl, and let them cool.
In the meantime, in a pan, brown the garlic with a drizzle of oil.
Add the tomato sauce, salt, and basil.
Add the rest of the ingredients to the eggplants: bread, garlic, Parmesan, egg, and a good pinch of salt. Mix all the ingredients with a spoon until you get a homogeneous mixture.
Take some dough and with slightly moist hands, form the eggplant meatballs. “Approximately 1 oz each meatball.” Coat them in flour.
Then dip them in the sauce and cook for about 7-8 minutes.
Turn the eggplant meatballs in sauce over and continue cooking, uncovered, for 5 minutes.
Storage
The eggplant meatballs in sauce can be stored in the refrigerator in an airtight container until the next day.
