My version is without sponge cake, replaced by ladyfingers soaked in alchermes. Additionally, it is filled with a delicious cream and layers, and finally dusted with plenty of powdered sugar. Ingredients

  • 6 egg yolks
  • 1/2 cup all-purpose flour
  • 3/4 cup sugar
  • 1 2/3 cups milk
  • to taste lemon zest
  • 2/3 cup heavy whipping cream
  • 1 sheet puff pastry
  • 2 tbsp brown sugar
  • ladyfingers
  • to taste alchermes (+ water)

How to Make Diplomatic Cake with Ladyfingers

  • Start by unrolling the pastry, then divide it in half lengthwise.

  • Prick the surface with a fork, then sprinkle it with powdered sugar. Bake at 350°F for about 15 minutes. Remove from oven and set aside.

  • Preparation of the custard: in a bowl, beat the eggs with sugar and vanilla flavoring using a mixer.
    Meanwhile, heat the milk with the lemon zest, then pour it into the mixture, straining out the lemon zest. Incorporate the flour, then place everything on the heat.

  • Continue stirring with a whisk by hand and cook until it thickens.

  • At this point, place the first pastry sheet on a serving plate and pour half of the cream on top.
    Use a spatula to cover the entire surface well.

  • Soak the ladyfingers in alchermes and place them on top of the cream, make another layer, and then close with the puff pastry disc.

  • Let it rest in the refrigerator until serving time,

  • then dust with plenty of powdered sugar.

  • An alternative to alchermes syrup?

    You can soak the ladyfingers with limoncello. For a non-alcoholic version, you can prepare a simple syrup with water, sugar, and vanilla!

    You can add chocolate chips or berries to the custard.

  • Can the bases be prepared in advance to save time?

    You can prepare the cream the day before and store it in the refrigerator covered with cling film in contact. However, I advise assembling it on the day of serving to preserve the crispness of the puff pastry.
