How to Make Easy Almond Cookies
In a large food chopper, place the almonds and blend for a few seconds until coarsely ground.
Then, add the vanillin, sugar, cinnamon, eggs, and baking powder; mix again for a few seconds. The dough should be soft and slightly sticky.
From the mixture, form many balls of about 0.7 oz each. Arrange all the balls with equal distance on a baking tray covered with baking paper.
Decorate the cookies with almonds and half a candied cherry, then refrigerate for at least half an hour. Finally, bake the soft almond pastries in a static oven at 355°F for 12-15 minutes. Remove from oven and let cool completely before transferring to a dessert tray, finally dust them with powdered sugar.

Traditionally, almond cookies are stored in a tin box (metal cookie box) for up to 5 days. If you don’t have one, you can still store them in a glass or plastic cookie jar.
