Ingredients

  • 3 eggs
  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup natural plain yogurt
  • 1 packet baking powder
  • 1/2 cup vegetable oil
  • 1/3 cup unsweetened cocoa powder
  • as needed Nutella®

How to make Ecstasy Muffins

  • Start by placing the flour, baking powder, sugar, and cocoa in a bowl, then mix well with a whisk.

  • At this point, also pour in the oil, yogurt, and eggs, and continue mixing. (You can also do these steps with the help of a stand mixer).

  • Mix well to combine everything.

  • Pour the batter into a greased and floured muffin pan, or alternatively, a silicone mold works perfectly (as I did).

  • Add the Nutella with the help of two teaspoons, then bake at 340°F (170°C) for about 20 minutes. Always do the toothpick test (obviously where you haven’t put the Nutella). If they become too dark on top, cover them with a sheet of aluminum foil for the last 10 minutes of cooking.

  • Remove from the oven and let cool slightly before removing from the mold.

Storage and tips for Ecstasy Muffins

Like many recipes of this type, Ecstasy Muffins can be stored for up to 4 days at room temperature under a cake dome. For an even more original version, you can add a teaspoon of pistachio.
