Ingredients

  • 2 eggplants
  • to taste tomato sauce (seasoned with salt and oil.)
  • 1/4 cup parmesan
  • 1/2 cup scamorza cheese
  • 1 egg
  • 1/3 cup breadcrumbs

How to Make Eggplant Bundles

  • Start by trimming the already washed eggplants, then slice them quite thinly.

  • Place the eggplant slices on a baking tray covered with parchment paper, salt them, and bake at 400°F for about 10 minutes.

  • When cooking is finished, remove them from the oven. Take two pieces and arrange them in a cross.

  • Then, season with the tomato sauce and proceed by adding a piece of cheese, such as scamorza or another type of soft cheese.

  • Close the ends to create a bundle. Secure it with a toothpick and set aside.

  • At this point, dip the eggplant bundles first in the egg and then in the breadcrumbs.

  • Transfer all the eggplant bundles to a baking dish and season with Parmesan and a drizzle of oil.

Storing the Eggplant Bundles

This preparation can be safely stored in the refrigerator for about 3 days in an airtight container. Freezing is not recommended.
