Eggplant Patties are an easy and quick recipe, perfect for any occasion.
Very versatile, they are a tasty alternative to the classic eggplant meatloaf or parmigiana.
They can be served as an appetizer, side dish, or even as a light main course.
There are many variations, but they are usually made with eggplants, eggs, and parmesan.
To make them even more delicious, I add a cheesy center… a real treat!

Ingredients

  • 1.1 lbs eggplants
  • 1/3 cup breadcrumbs
  • 1/4 cup parmesan
  • to taste salt
  • 1 egg
  • 3 oz scamorza
  • 3 tbsps tomato sauce
  • 1 clove garlic

How to make Eggplant Patties

  • After washing the eggplants, remove the ends and slice them, then cut into regular cubes.

  • At this point, cook in a pan with a drizzle of oil and garlic.

  • Add the tomato sauce and salt, cook for about 15 minutes.

  • Once the eggplants are cooked, blend everything, then add the breadcrumbs, parmesan, and egg and mix.

  • At this point, pour the mixture into oiled and breadcrumb-coated ramekins.

  • Sprinkle the surface with breadcrumbs, drizzle with some oil, then insert a piece of cheese. Air fry at 356°F for 20 minutes. Remove and invert onto a serving plate and garnish with basil.

Storage and Variations of Eggplant Patties

They can be stored in an airtight container until the next day. If you prefer, you can replace the eggplants with zucchini and use another type of stringy cheese.
