Eggplant Wallets Easy and quick recipe from Italian tradition!
Great to be served as an appetizer or main dish, eggplants are truly versatile.
Some of my favorite recipes include eggplant rolls with rice, the legendary potato parmigiana, or the savory eggplant roll with arugula and speck.
The eggplant wallets stuffed with speck and cheese are simply amazing, crispy outside, gooey inside, you must try them!

Ingredients
- 2 eggplants
- 5.3 oz speck
- 2 eggs
- as needed breadcrumbs
- as needed salt
- as needed extra virgin olive oil
- 3.5 oz mozzarella
How to make Eggplant Wallets
Wash and trim the eggplant, then cut it into slices about 3/4 inch thick. Let them purge for 10-20 minutes (optional, to remove bitterness), then dry them with a cloth.
Grill them in a skillet on both sides and then season with a pinch of salt.
Then dip them in the beaten egg followed by the breadcrumbs.
Fill each slice with speck and cheese, secure with a toothpick, and then bake in the oven with a drizzle of oil at 375°F for about 15 minutes.
Storage and Tips for Eggplant Wallets Recipe
They are usually stuffed with cooked ham and melting cheese, the eggplants can be grilled or baked or even cooked in an air fryer. If you desire a sweeter and richer flavor, add tomato sauce (preferably homemade). Once cooked, they can be stored in the refrigerator in an airtight container for up to two days.
