Flatbread Baskets with Citterino Riassunto

Flatbread baskets perfect for the Christmas Holidays. I love preparing delicious and tasty appetizers; the baskets can be made well in advance. Ingredients

  • 2 flatbreads (rollable)
  • to taste extra virgin olive oil (for brushing)
  • 9 oz stracchino cheese
  • 2 packs Citterino Riassunto
  • to taste arugula

How to make flatbread baskets with Citterino Riassunto

  • Take the flatbread and with a 4-inch pastry cutter or alternatively a cup, cut out some discs, then brush them on both sides with the oil, and place them in muffin molds.

    Fill with a teaspoon of stracchino cheese and bake in the oven at 390°F for about 8 minutes, when the edges start to become golden, your flatbread baskets will be ready. After the cooking time, unmold the baskets and set aside.

    At this point, take the slices of Citterino Riassunto salami, then lay 4-5 slices side-by-side slightly overlapping. Fold the slices in half, then roll them to create rosettes.

    Place each rosette inside the flatbread baskets then garnish with a few arugula leaves.

Storage and variations for flatbread baskets with Citterino Riassunto

They can be stored in the refrigerator covered with plastic wrap for up to one day. If you don’t have flatbreads, you can use sliced bread, while instead of stracchino cheese, you can use Robiola or goat cheese.
