- 1 bunch parsley
- 150 g cherry tomatoes
- 2 tbsp extra virgin olive oil
- 6.35 oz speck
- 3.5 oz cheese (scamorza, provola or mozzarella)

How to make Gratinated Eggplant Rolls
Wash and trim the stem of the eggplants, then slice them not too thickly (about 3/8 inch is enough).
Lightly pat them dry with paper towels, and then grill them in a pan, cooking both sides.
Prepare the breading with breadcrumbs, chopped parsley, and parmesan. Pour milk into a large bowl.
Take the eggplant slices and dip them first in milk, then in breadcrumbs.
Then fill with a slice of speck and a small piece of cheese, then roll them up to form a roll.
Place the rolls in an oiled baking dish sprinkled with breadcrumbs. Add the cherry tomatoes and season with oil.
At this point, bake the eggplant rolls for 25 minutes at 392°F in static mode.
Remove from oven and serve hot and melty!
