Jam Muffins are soft and irresistible treats, perfect for breakfast or a snack, and the jam doesn’t sink to the bottom.
Very tasty, there are also grandma’s muffins and ecstasy muffins; in an autumn version, you can try apple muffins without butter.
For this recipe, I used the classic base, enriched with strawberry jam, my favorite, but you can choose whichever you love the most.
For an even more indulgent touch, you can add dark chocolate chips or garnish with sugar sprinkles or almond flakes.

Ingredients
- 1 cup all-purpose flour
- 1 egg
- as needed lemon zest
- 1/3 cup g sugar
- 1 packet baking powder
- 1/2 cup yogurt (plain, Greek, or citrus)
- 2 3/4 tbsp vegetable oil
- as needed strawberry jam
- as needed powdered sugar
How to Make Jam Muffins
In a bowl, beat the egg with the sugar, add the yogurt, oil, and mix with a whisk.
Finally, incorporate the flour and lastly the baking powder, if possible sift everything.
Then pour the mixture into the muffin molds, previously buttered and floured, add a generous tablespoon of jam on top.
As the last step, just bake at 350°F (175°C) for about 15-20 minutes in static mode.
Storage and Variations of Jam Muffins
They can be stored in a cake dome for up to 3 days. You can replace the oil with butter (90g). For a cocoa version, you can substitute 30g of all-purpose flour with unsweetened cocoa. For the topping, let your imagination run wild, for example with: chopped hazelnuts, pistachios, or colorful sprinkles. If you don’t have yogurt at home, you can replace it with ricotta.
