Ingredients
- 1 3/5 cups all-purpose flour (to sieve)
- 2 eggs
- 6 3/4 tbsp milk
- 1 tbsp baking powder (to sieve)
- 1/2 cup sugar
- as needed apricot jam
- 4 3/4 tbsp peanut oil

Steps
In a bowl, beat the eggs with sugar and grated lemon zest.
Add milk and oil, then incorporate the flour and baking powder.
Pour the batter into a 8.66-inch pan and level it well.
Using a piping bag filled with apricot jam (blended to break down larger pieces), create strips over the batter forming a diamond pattern.
Garnish the cake forming a lattice. Bake in a preheated static oven at 356°F for about 30 minutes. Cover the cake with aluminum foil for the last 8 minutes.
ALWAYS DO THE TOOTHPICK TEST: Insert it in the center of the cake (where there is no cream) and it should come out dry. If you notice it’s browning too much on the surface, cover it with a sheet of aluminum foil for the last 7-8 minutes.
