Kissed Pizza or a “pocket pizza” is a simple and tasty rustic dish, a typical Neapolitan recipe. It is a white pizza folded over itself to “kiss”. Once cooked, it is filled with whatever you prefer. For the pizza base recipe, I used my classic recipe, without oil in the dough light and crispy, the dough can also be made by hand without the use of a stand mixer, it just requires a little patience to respect the leavening times. Ingredients
- 2 3/4 cups all-purpose flour
- 1 3/4 tsp active dry yeast
- 1 1/4 tsp salt
- as needed extra virgin olive oil
- 1 cup cups water
- 7 oz mozzarella
- as needed arugula
- as needed cherry tomatoes
- as needed extra virgin olive oil

Steps
Pour the flour and yeast into the stand mixer, then add the water and salt.
Knead everything until a well-mixed dough ball forms, cover with plastic wrap and let it rest for 15 minutes.
After the resting time, fold the dough towards the center, repeat this operation after 15 minutes (so fold twice), at this point form a ball and transfer to a well-oiled bowl.
Let it rest for 2 hours this time. After the resting time, divide the dough into 3 balls and let them rise for 2 hours in the oven that is turned off but with the light on.
Spread your doughs with your hands over the re-milled semolina flour, season with the oil.
Fold it over itself, cook in a preheated oven at 392°F for about 10-15 minutes.
Remove from oven and open the kissed pizza
Fill with arugula, mozzarella, cherry tomatoes, and a drizzle of oil.
Advice
You can also cook kissed pizza in a pizza oven or an air fryer. You can obviously fill it as you prefer: Pesto and stracciatella, cooked ham and mozzarella, or grilled vegetables for a vegetarian version.
