They are perfect to serve to the whole family, and the recipe is the classic one I use for veal meatballs with mushrooms, slightly adapted to use chicken meat. Alternatively, you can also try the baked meatballs with potatoes and the baked meatballs with peppers. The lemon chicken meatballs can be accompanied by savory baked carrots. With this amount, you will make about 10 meatballs, and they can be prepared well in advance and cooked just in time.

Ingredients

  • 1.32 lbs chicken breast (ground)
  • 2 tsp salt
  • 1 egg
  • 1/3 cup Parmesan cheese
  • as needed milk
  • 1 lemon
  • 1/3 cup breadcrumbs (or stale bread)

How to Make Lemon Chicken Meatballs

  • In a large bowl, place the ground chicken, egg, salt, Parmesan cheese, breadcrumbs, milk, and grated lemon zest.

  • Mix well with your hands until all the ingredients are combined.

  • Take a small portion of meat and form into small meatballs by rolling them with your hands. Then coat them in flour.

  • Place the meatballs in a pan with a drizzle of olive oil, browning them for a few minutes and turning often to prevent sticking. Deglaze with wine and let it evaporate.

  • Shortly before the end of cooking, squeeze a lemon and pour the juice into the pan. Continue cooking for another 3 minutes.

  • If you like, you can garnish with chopped parsley.

Storage of Lemon Chicken Meatballs

The lemon chicken meatballs can be stored in the refrigerator for a couple of days, closed in an airtight container or covered with plastic wrap. If you used fresh ingredients, you can also freeze them in the same way.
