Ingredients

  • 18 oz mascarpone
  • 1/3 cup sugar
  • 5 eggs
  • 10.5 oz Lotus Biscoff Cookies
  • 10.5 oz Lotus Biscoff Cream
  • 1 cup coffee

Lotus Cream Tiramisu

  • Start by separating the egg whites from the yolks, and beat the yolks with the sugar until they are pale.

  • At this point, add the mascarpone and mix again. Mix well until you create a smooth, lump-free cream.

  • Separately, whip the egg whites to stiff peaks and then fold them into the mixture, being careful not to deflate the egg whites too much.

  • Place some cream on the bottom of a baking dish, then soak the cookies in coffee and layer with more mascarpone and Lotus cream.

  • Create multiple layers until all the ingredients are used.

  • Decorate with both whole and crumbled cookies on the top, then add a light layer of Lotus cream. Finally, let it rest in the refrigerator for at least 1 hour.

Storage and Tips for Lotus Cream Tiramisu

All kinds of tiramisu, even in the variant I propose, can be stored in the fridge for up to 3-4 days. To preserve its freshness and prevent fridge odors, cover it with plastic wrap and use only the freshest eggs. Alternatively, you can use the mascarpone cream with pasteurized eggs.
