How to Make Meatloaf with Mushrooms and Potatoes
In a large bowl, place the ground beef, salt, garlic, breadcrumbs, egg, and grated Parmesan cheese.
Now knead everything with your hands until you get a homogeneous and uniform mixture.
Then spread the mixture between two sheets of parchment paper and use a rolling pin to shape it into a rectangle.
At this point, cook the mushrooms in a pan with a drizzle of oil and a clove of garlic.
Salt to taste and continue cooking for 7-8 minutes over high heat.
Use the mushrooms to fill the meatloaf, then add the speck and sliced cheese.
With the help of the paper, roll it up forming a log, compact it well, then let it rest in the refrigerator for at least half an hour.
In the meantime, cut the potatoes into cubes, not too large, but all the same size. Transfer them to a baking tray lined with parchment paper and season with the spices.
Add the meatloaf and season with breadcrumbs and a drizzle of oil.
