Mediterranean Chicken Rolls

The Mediterranean Chicken Rolls are a truly tasty second course. Extremely easy and quick recipe, I chose cooked ham and cheese as the filling, but you can vary the ingredients according to your tastes. For instance, in the chicken rolls with sausage, I made a different filling that you can also use for the Mediterranean rolls, then you will need: cherry tomatoes, green olives.

Ingredients

  • 6 slices chicken breast
  • 1 cup cherry tomatoes
  • to taste green olives
  • to taste salt
  • 2 tablespoons extra virgin olive oil
  • 1/2 glass white wine
  • 1 bunch parsley
  • 1 clove garlic
  • 3.5 oz cooked ham
  • 2.5 oz cheese

How to make Mediterranean Chicken Rolls

  • Place the chicken breast slices on a cutting board, salt them, and add a slice of cooked ham to cover the entire chicken slice and a piece of cheese.

  • Close and roll, then secure with toothpicks.

  • Heat 3 tablespoons of extra virgin olive oil in a pan together with the peeled garlic clove.

  • Place the rolls and cook them on high heat for 5 minutes, browning them completely. Deglaze with the wine, let it evaporate, then lower the heat and lightly salt.

  • At the end of cooking, add the cherry tomatoes and olives.

  • Place the Mediterranean rolls on the plates with their sauce and serve hot. (Remember to remove the toothpicks).

Storage of Mediterranean Chicken Rolls

The Chicken Rolls can be stored in the refrigerator for up to one day, well sealed in an airtight food container.
