- 1/2 cup heavy cream
- 1 tbsp powdered sugar
- 2 sheets gelatin (4 g)
- 10 1/2 oz sour cherries with syrup

How to Make Mini Amarena Cheesecakes
Prepare the base: in a food processor, finely grind the cookies, then transfer them into a bowl. Add the melted butter and mix with a spoon to get a moist mixture.
Place the mixture into paper molds, press firmly and let them rest in the freezer. Meanwhile, soak the gelatin.
Prepare the cream: In a bowl, mix the cream cheese, ricotta, sugar, and add the squeezed gelatin dissolved in two tablespoons of hot cream. Whip the remaining cream and fold it into the mixture.
Retrieve the molds with the bases, fill them to the rim with the cream, leveling the surface with the back of a spoon.
Place the mini cheesecakes back in the freezer for at least 2 hours.
Once set, remove them from the baking cups and decorate just before serving.
