Ingredients

  • 1 1/4 cups cookies
  • 4 tbsp butter
  • 1 1/4 cups ricotta cheese
  • 5 1/4 oz cream cheese
  • 1/2 cup heavy cream
  • 1 tbsp powdered sugar
  • 2 sheets gelatin (4 g)
  • 10 1/2 oz sour cherries with syrup

How to Make Mini Amarena Cheesecakes

  • Prepare the base: in a food processor, finely grind the cookies, then transfer them into a bowl. Add the melted butter and mix with a spoon to get a moist mixture.

  • Place the mixture into paper molds, press firmly and let them rest in the freezer. Meanwhile, soak the gelatin.

  • Prepare the cream: In a bowl, mix the cream cheese, ricotta, sugar, and add the squeezed gelatin dissolved in two tablespoons of hot cream. Whip the remaining cream and fold it into the mixture.

  • Retrieve the molds with the bases, fill them to the rim with the cream, leveling the surface with the back of a spoon.

  • Place the mini cheesecakes back in the freezer for at least 2 hours.

  • Once set, remove them from the baking cups and decorate just before serving.
