Mini pizzas with potatoes and sausage are a really tasty snack that is easy and perfect for a snack or dinner. I love kneading and trying new recipes, such as my Sicilian mini pizzas and the Danubio pizza super soft and delicious! The recipe I show you today is made in a few hours, just flour, yeast, and salt, and these quantities yield about 12 mini pizzas. You can also enrich them by adding grated Parmesan, or choose to make one large pizza in a baking tray.

Ingredients
- 6 cups all-purpose flour
- 2 tsp salt
- 2 cups water
- 2 1/4 tsp active dry yeast
- 1 potato
- 7 oz sausage
- 1 sprig rosemary
- to taste extra virgin olive oil
How to Make Mini Pizzas with Potatoes and Sausage
Pour the flour and yeast into a bowl, then add the water, salt, and knead everything well.
Transfer the dough onto a lightly oiled workbench, make a couple of folds and form a ball. Place the dough in a large and well-oiled bowl, and let the dough rise for about 2 hours covered with plastic wrap.
After the resting time, divide the dough into 12 balls of about 3.9 oz each; then let them rest again for 20 minutes covered with a cloth.
After the resting time, stretch each ball by hand to create the base of the mini pizza. Meanwhile, slice the potato with a mandoline.
Top with the sausage, some potato slices, a pinch of salt, rosemary, and a drizzle of oil. Bake at 375°F with the fan mode for about 10-15 minutes.
As the final step, remove from the oven and top with mozzarella, then return to the oven for a few minutes until it melts.
Storage and Tips for Mini Pizzas with Potatoes and Sausage
The mini pizzas with potatoes and sausage can be kept in a food bag for up to 2 days. Once cooled, you can freeze them. If you prefer to use less yeast, you will need to extend the rising times.
