Ingredients

  • 1 sheet puff pastry
  • 21.16 oz cherry tomatoes
  • to taste dried oregano
  • to taste salt
  • to taste extra virgin olive oil
  • to taste balsamic vinegar
  • 3.53 oz stracciatella
  • to taste basil

How to Prepare Mini Tarte Tatin with Cherry Tomatoes

  • Place parchment paper in a baking tray, create circles with oil and a drop of vinegar, a pinch of salt, and oregano.

  • At this point, place the cherry tomatoes side by side, as you can see in the picture.

  • Unroll the puff pastry and use a pastry cutter to cut circles, then place them over the cherry tomatoes.

  • Prick with a fork and bake in the oven at 375°F for about 12 minutes. Once baked, gently flip them over, and with the help of a spatula, transfer them to a serving plate. Complete the garnish with stracciatella or alternatively buffalo mozzarella and fresh basil.

Storage and Tips for Mini Tarte Tatin with Cherry Tomatoes

This kind of preparation can be stored in the refrigerator until the next day in an airtight container. Instead of stracciatella, you can make the garnish a bit more sharp by replacing it with feta.
