Ingredients
- 2 rolls Puff Pastry (round)
- 3.5 oz Speck
- 3 Potatoes (large)
- 7 oz Mushrooms
- 1.75 oz Parmigiano Reggiano
- 2.75 oz Provolone
- 1 clove Garlic
- 1 bunch Parsley
- 1 egg
- to taste Salt
- to taste Extra virgin olive oil
How to Prepare the Mountain Pie
First, boil the potatoes in plenty of salted water. Then take the mushrooms, clean them and slice them, then sauté them with garlic and olive oil in a pan for about five minutes; then salt and add the chopped parsley and let cool.
In the meantime, in a large bowl, mash the potatoes and season them with salt, grated Parmigiano, add the egg, speck, and mushrooms, and then mix everything well.
At this point, unroll the first puff pastry sheet over a 11-inch pie pan, then fill it with the prepared mixture, and finally add the provolone.
Then cover it with the remaining puff pastry sheet, seal the edges well, and brush with a beaten egg.
Next, make many small holes with a toothpick, then bake your mountain pie at 356°F for 30 minutes, and let it cool slightly before serving it sliced.
