No-Knead Focaccia with Cherry Tomatoes

The no-knead focaccia with cherry tomatoes is really simple, requiring no kneading or lengthy procedures! I topped it with cherry tomatoes and brine, but you can add anything: anchovies, hot dogs, or olives. In this recipe, I’ll explain the simple steps to make a focaccia that’s crispy on the outside, very tall, and soft inside without using a mixer. Ingredients

  • 4 cups all-purpose flour
  • 1 3/4 cups water (lukewarm)
  • 1 1/3 tbsp extra virgin olive oil
  • 1 tbsp salt
  • 2.5 tsp active dry yeast
  • 8 tbsp water
  • 4 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1 cup cherry tomatoes

Steps

  • Pour the lukewarm water into a large bowl along with the yeast.

  • Stir well with a fork until fully dissolved.

  • At this point, start incorporating the flour. Pour the oil and the salt and continue mixing well, incorporating the dough.

  • Make folds inside the bowl by taking the edges and bringing them to the center. Repeat this step at least 10 times, then let it rise for 2 hours in the oven turned off with the light on.

  • As the final step before baking, pour the soft dough into an oiled baking pan, with your hands slightly greased.

  • Add the brine prepared with oil and water. Make the classic focaccia dimples, cover with cherry tomatoes, and bake at 400°F on the oven base for 25 minutes.
