- 3.5 oz bacon

How to make oven-baked pork roast
Take the meat, make cross-cuts, cover it with plastic wrap, and pound it with a meat mallet, then season with salt, pepper, and rosemary sprigs, let it rest for 2 hours.
In the meantime, cook the mushrooms in a pan with a drizzle of oil and a clove of garlic, then season with salt and continue cooking for about 5-6 minutes.
Take the meat back and stuff it with the slices of bacon and the prepared mushrooms.
At this point, roll the meat onto itself and close with kitchen twine.
Wash and peel the potatoes, then cut them into wedges. Tie the roast and place it in a baking dish along with the potatoes. Then, in a small bowl, mix 1 tablespoon of mustard and 1 tablespoon of soy sauce.
Then mix and use the sauce to brush the surface of the meat. Bake in the oven at 375°F (190°C) for about 60 minutes in static mode.

The roast can be stored in the refrigerator in an airtight container. Feel free to experiment with spices according to your personal taste. If you can’t find pork neck, you can substitute it with pork loin or veal undercut.
