Parmesan Baskets with Prosciutto is an easy and tasty appetizer. Spectacular and practical, they can be prepared well in advance and filled just before sitting at the table. Some time ago, I suggested parmesan baskets with lentils perfect for New Year’s Eve. Today I want to propose this version complete with step-by-step photos and video filled with arugula, prosciutto, and stracciatella to include in the Christmas lunch menu. If you prefer a vegetarian version with ricotta, basil, and cherry tomatoes or with fish: lay a base of arugula and shrimps in pink sauce. If you prefer a hot version, try bread baskets with ham, warm and stringy.

Ingredients

  • 10.5 oz grated parmesan
  • 2/3 cup stracciatella
  • 9 oz prosciutto
  • 2 oz arugula

How to Make Parmesan Baskets with Prosciutto

  • Place a square of parchment paper in a pan, then lay 3 tablespoons of grated parmesan and spread it with the back of a spoon to form a circle.

  • Cook over medium flame until you see the cheese has melted and formed a very light golden color.

  • At this point, remove it from the heat and overturn it onto an upside-down glass, then shape it well to form a basket, let it cool for 1 minute.

  • Once all the baskets are created, place them on the serving plate and fill them with arugula, prosciutto, stracciatella, and pistachio granules.

Storage and Tips for Parmesan Baskets with Prosciutto

The parmesan wafers can be made 3-4 hours before sitting at the table, but they should be filled at the moment. Parmesan baskets can be used as an appetizer or as a first course served with risotto.
