Ingredients
- 3 oz bacon
- 8.5 oz spaghetti
- 4 eggs
- 1/3 cup Parmesan cheese
- 3.5 tbsp milk
- 2.8 oz mozzarella
- to taste salt
How to make pasta frittatas
In a pan, sauté the diced bacon, then let it cool.
Boil the spaghetti in plenty of salted water, then drain and set aside.
In a bowl, add the eggs and milk and mix, then add the grated Parmesan cheese and salt.
Add the bacon and also the cooked pasta and mix well.
With a fork, transfer the rolled spaghetti into muffin molds to create nests. If there is any liquid left in the bowl, pour it into the molds as well.
Add some pieces of mozzarella inside the molds and top with Parmesan. At this point, bake in the oven or air fryer at 356°F for about 15-20 minutes.
Storage and variations on pasta frittatas
They can be stored in the refrigerator inside an airtight container for up to 3 days. Instead of bacon, you can use cooked ham and replace the cheese with others such as mozzarella or spicy provolone. If not using fresh bacon with other cured meats, skip the step of sautéing in the pan.
