Pinwheel Cake soft and delicious, ideal for breakfast. A while ago, I made a similar recipe, the cocoa and cream pinwheel cake but this time I wanted to try it with jam, much quicker and delicious. I find that jam in pantry cakes blends wonderfully, and in my case, I used apricot jam, but you can use whichever you prefer. The only advice is to choose a jam without large pieces of fruit, as they won’t pass through the piping bag. Ingredients
- 2 eggs
- 2/3 cup sugar
- 1 lemon zest
- 6 tbsp vegetable oil
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/3 cup milk
- as needed jam
How to Make the Pinwheel Cake
In a large bowl, beat the eggs with the sugar and grated lemon zest. Continue by adding the milk and oil,
Finally, incorporate the sifted flour and baking powder. Mix until you obtain a homogeneous batter.
Pour the batter into a 9-inch greased and floured cake pan.
At this point, using a piping bag filled with jam, draw a spiral on top of the batter as you see in the photo.
Bake in the oven at 350°F for about 35 minutes.
Remove from the oven and let cool completely before dusting with powdered sugar!
Storing the Pinwheel Cake
This pantry cake can be stored safely under a cake dome for up to three days. It can be frozen.
Can I fill the cake with spreadable creams?
Of course, you can also use custard or other jams.
How do I make the jam spiral perfect?
A little trick is to blend the jam with a hand blender to make it smoother and without lumps, so it will flow beautifully from the piping bag.
