- 2/3 cup cornstarch
- 1/2 cup sugar
- 1 1/4 cup pistachio cream
- 2 cups milk
- 1 tbsp pistachio cream
- to taste chopped pistachios

How to Make Pistachio Pudding
In a pot, pour 3/4 of the milk, add the sugar, bring it to the heat and let it come close to a boil.
Meanwhile, in a separate bowl, mix the remaining milk with the cornstarch and the pistachio cream.
Mix well with a whisk until the mixture is smooth. Add it to the hot milk in the pot.
Cook over low heat until it thickens completely. (it will take about 4-5 minutes).
Pour everything into a silicone loaf pan and let it rest in the freezer for at least 3 hours.
Unmold it and place it on a serving plate, serve with pistachio cream and chopped hazelnuts.
Storage and variations of pistachio pudding
Pistachio pudding can be stored in the freezer for up to 3 months covered with food wrap. You can decorate your pudding with chopped pistachios and whole pistachios, or melted white chocolate and chopped hazelnuts.
