Ingredients

  • 20 slices sandwich bread (with crusts)
  • 3/4 cup tomato pulp
  • 7 oz scamorza cheese
  • 7 oz mozzarella
  • 2 tbsps extra virgin olive oil
  • to taste oregano
  • to taste grated parmesan
  • to taste diced speck
  • to taste salt

How to Make Pizza Toast

  • Cover a rectangular baking tray with parchment paper, then lay the slices of sandwich bread close to each other.

  • Continue by seasoning the surface of the slices with tomato pulp and a pinch of salt. Place a thin slice of scamorza for each serving.

  • Spread more slices of sandwich bread over the filling, covering the entire tray.

  • Then fill again with tomato, oregano, mozzarella, and grated parmesan, drizzle with a little extra virgin olive oil. Bake in a fan oven at 392°F for about 10-15 minutes.

Storage and Variations for Pizza Toast

This type of recipe is best consumed immediately when it is still hot and stringy coming out of the oven. If there are leftovers, you can store them in an airtight container in the refrigerator. You don’t necessarily have to use the listed ingredients, but you can let your imagination run wild based on what you have in the fridge. You can add salami or diced cooked ham. For those with a sweet tooth, you can add 1 tablespoon of béchamel.
