Ingredients
- 1.1 lbs potatoes
- 3 eggs
- 1/4 cup Parmesan cheese
- to taste salt
- to taste extra virgin olive oil
- to taste breadcrumbs
- 6 slices bresaola
- 6 cherry mozzarella balls
- 6 taralli
- to taste arugula
How to make Potato Baskets
Start by washing and peeling the potatoes, then grate them with a large-hole grater.
Squeeze out their liquid and then transfer them into a mixing bowl, then season with salt, Parmesan cheese, and eggs.
Mix everything until a well-blended batter forms. Then pour into muffin molds, previously oiled and sprinkled with breadcrumbs.
Bake in an electric oven at 356°F on the low rack (the second to last) for about 15-20 minutes or until golden. They can also be cooked in an air fryer by reducing the cooking time.
Once done, remove from the oven and let cool completely.
As a final step, fill the basket with a slice of bresaola, a tarallo, and a cherry mozzarella ball. You can create new combinations according to your tastes!
Storage and tips for potato baskets
The Potato Baskets can be stored in an airtight container until the day after. Reheat them in the microwave or oven and then fill them to taste, such as with salmon and stracciatella. A great vegetarian alternative could be to fill the baskets with grilled vegetables.
