Today we’re trying an alternative recipe: it’s made from a layer of mashed potatoes, which wraps around cooked ham and cheese of choice. The whole thing is wrapped in the famous puff pastry. Ingredients
- 21 oz potatoes
- 1 egg (small)
- 1 oz Parmesan cheese
- to taste salt
- 1 roll puff pastry (rectangular)
- 5.3 oz cooked ham
- 2.1 oz cheese
How to prepare potato meatloaf en crust
Wash the potatoes and place them in a pot with cold water. Bring the water to a boil and let the potatoes cook for about 30 minutes or until tender, testing with a fork.
Once cooked, pass them through a potato ricer while still hot, with their skins on.
Add salt, grated cheese, and the egg to the hot potatoes, then mix everything together.
Once you have a homogeneous mixture, press it onto the puff pastry.
Fill with slices of cooked ham and cheese. Then roll it up, using parchment paper to help, and seal the edges well.
At this point, brush the surface with beaten egg and bake at 375°F for about 30 minutes or until golden.

It is preferable to consume the potato meatloaf en crust on the same day to preserve its crispness. You can freeze the potato meatloaf without the puff pastry; make sure to wrap it well in cling film or a food bag.
