Potato Meatloaf with Mushrooms, here’s my secret for a perfect dinner. Creamy and enveloping, today I want to tell you how this recipe was born. First of all, I was inspired by the classic potato meatloaf, I recommend also preparing the great classics with minced meat like the bacon-wrapped meatloaf and the meatloaf in tomato sauce cooked in a pot. The potato meatloaf with mushrooms is an economical and practical recipe because you can prepare it well in advance and keep it until cooking time. All you need are just a few simple ingredients: Potatoes, 1 egg, grated Parmesan cheese, and salt. For the filling, I went with mushrooms and speck, but you can create new combinations like speck and walnuts, or spinach and mozzarella heart. Let your imagination run wild. Let me know if you try it, kisses Chicca.

Ingredients
- 1.76 lbs potatoes (to peel)
- 1 egg
- 1/3 cup grated Parmesan cheese
- as needed salt
- as needed breadcrumbs (for garnishing)
- 10.5 oz mushrooms
- 7 oz speck
- 1/3 lb scamorza
How to Make Potato Meatloaf with Mushrooms
Peel the potatoes and cut them into more or less regular pieces and cook them in salted boiling water for about 7-8 minutes or until they are soft with a fork.
Once cooked, pass them through a potato masher while still hot, add the salt
The grated cheese and the egg and mix everything.
Once you have obtained a homogeneous mixture, flatten it on a sheet of well-oiled parchment paper sprinkled with breadcrumbs, giving it a rectangular shape. Fill with speck, mushrooms, and cheese.
Then roll it up using the parchment paper and transfer it to a loaf pan.
Sprinkle the surface with breadcrumbs and a drizzle of oil. Bake the potato meatloaf in a preheated oven at 392°F for about 35-40 minutes.
Storage and Variations of Potato Meatloaf with Mushrooms
The meatloaf is even better the next day. This potato meatloaf lends itself to numerous variations: you can add a melting heart of mozzarella if you don’t like scamorza, or replace the speck with bacon or cooked ham, or use porcini mushrooms for a more intense flavor. For a vegetarian version, just eliminate the speck and increase the amount of mushrooms.
