Returning to the Roll in question, I filled it with Philadelphia cheese, speck, and arugula, but you can put any cold cuts or cheese you like inside. - 1.1 lbs potatoes
- 4 eggs
- 1/4 cup Parmesan cheese
- to taste salt
- to taste breadcrumbs
- to taste extra virgin olive oil
- 3.5 oz cooked ham
- to taste arugula
- 2 tablespoons spreadable cheese

How to make the potato roll
Start by peeling the potatoes, then grate them using a coarse grater.
Squeeze them a bit and then transfer them to a bowl, then season with egg, Parmesan cheese, and salt.
Mix everything until you form a well-amalgamated batter. Then line a baking sheet (or a pan) with baking paper, oil it, and sprinkle it with breadcrumbs.
Pour the mixture and bake in the oven at 392°F with fan mode for about 20-25 minutes.
Remove from the oven and immediately, without letting it cool, spread the surface with Philadelphia cheese, arugula, and speck.
Roll it up tightly to form a roll. Wait for it to cool completely and serve it sliced, with a side of tomatoes.
