Today’s recipe is perfect in all seasons and is also ideal for those with little experience in the kitchen. You can serve it as an appetizer, a side for meat or fish, or simply on its own as a snack. The batter is made with flour, water, salt, and 1 tablespoon of Philadelphia, without eggs and yeast. Mix everything with a simple fork, arrange the potatoes, and bake!

Ingredients

  • 14 oz potatoes
  • 2 cups water
  • 2 cups all-purpose flour
  • 1.5 tsp salt
  • 2 tbsps cream cheese
  • 4 tbsps grated Parmesan cheese
  • to taste extra virgin olive oil
  • to taste rosemary

How to Make Potato Rustic Pie

  • Peel the potatoes then slice them very thinly, set aside.

  • In a large bowl, pour water and salt, then gradually add the flour.

  • Pour the batter into a baking tray lined with parchment paper, 9×6 inches, or line it with parchment paper.

  • Next, top with potatoes, placing them side by side.

  • Season with a pinch of salt, rosemary sprigs, grated Parmesan, and a drizzle of oil. Bake in a static oven at 375°F for about 40 minutes or until golden brown.

  • Remove from oven and serve on a cutting board or serving plate, delicious hot and great cold too.

The potato rustic pie can be stored at room temperature until the next day. You can prepare it with semolina flour for a more intense flavor and a firmer texture. You can enrich it by adding sliced onions.
