Prisoner’s Pasta is one of my favorite main courses; the recipe is easy and quick. Some time ago, I conducted a small investigation into why it’s called this way; possibly due to its strong flavors, like chili and sausage, but some suppose it’s because of the pasta’s lines, reminiscent of prison bars. Beyond the name, it is a very tasty dish, yet suitable for all palates. It is prepared really quickly and is perfect for family lunches or midnight dinners!

Ingredients
- 1/2 onion
- 2 tablespoons extra virgin olive oil
- 0.77 lbs sausage
- 0.42 cups brandy
- to taste chili powder
- 0.85 cups tomato puree
- 0.85 cups fresh liquid cream
- 9.88 oz rigatoni
Steps
Start by cooking the pasta in salted boiling water for the time indicated on the package.
Meanwhile, in a pan, sauté the onion with a drizzle of olive oil.
Add the crumbled sausage and brown it for 2-3 minutes. Deglaze with brandy and then add the chili, cooking over high heat.
Pour in the tomato puree and fresh cream, continuing to cook until it thickens for about 7-8 minutes.
Drain the pasta, and transfer it to the pan with the sauce, mixing everything well, allowing the sauce to reduce slightly.
As a final step, add the chopped parsley and serve immediately while still hot.
Storing Prisoner’s Pasta
Prisoner’s Pasta can be stored in the refrigerator, sealed in a container, until the next day. To reheat it, just add a little cream and heat for a few minutes in a pan or microwave.
