This recipe is perfect both as a tasty appetizer and as a main course (a handy dinner-saver idea). It’s really easy to make with ready-made puff pastry, but if you prefer you can replace it with shortcrust pastry; it encloses a soft filling of mashed potatoes enriched by the intense, enveloping flavor of Taleggio cheese and diced cooked ham.

Ingredients

  • 9 oz potatoes
  • 1 sheet puff pastry
  • 3.5 oz Taleggio
  • 2 oz cooked ham
  • to taste milk
  • to taste salt
  • 2 tablespoons breadcrumbs

How to make puff pastry tart with mashed potatoes and Taleggio

  • Take the potatoes, cut them into cubes, and parboil them for 6–7 minutes in salted boiling water.

  • Once cooked, drain and mash them in a bowl. Add a pinch of salt, the Parmesan, and pour in a little milk; mix well.

  • Unroll the puff pastry and sprinkle it with breadcrumbs.

  • Add the mashed potatoes, Taleggio, and the cooked ham cut into cubes, then bake in a conventional (no-fan) oven at 374°F for about 25 minutes.

Storage and tips for the puff pastry tart with mashed potatoes and Taleggio

This type of tart is best consumed within the same day, as the puff pastry will lose much of its crispness over time.
