Ready Piadi Pizza in 5 Minutes, a perfect lunch saver! The recipe is super simple, I used my foolproof olive oil piadina recipe, which you can prepare even a few weeks in advance and freeze already cooked, so you always have them ready.

Ingredients

  • 4 cups all-purpose flour
  • 2/3 cup water
  • 2 tsp salt
  • 1 pinch baking soda
  • 1/4 cup extra virgin olive oil
  • 2 tbsp tomato sauce
  • 9 oz mozzarella
  • to taste extra virgin olive oil
  • to taste basil
  • to taste salt
  • 1 Pan

Steps

  • Take a large bowl, pour in the flour, baking soda, water, oil, and salt, then mix well.

  • First with a fork and then with your hands.

  • Transfer the mixture onto a floured surface and continue kneading until it becomes a soft and compact dough.

  • Continue by wrapping the dough with plastic wrap and let it rest at room temperature for at least half an hour. (if possible)

  • After the resting time, divide the dough into 5 balls, then roll out your piadinas with a rolling pin to create thin discs.

  • Cook the piadinas in a well-heated nonstick pan.

  • Flip to the other side and then fill with tomato sauce seasoned with salt, oil, and oregano, finally add the mozzarella.

  • Once ready, garnish with a drizzle of oil and fresh basil

Storage

It is preferable to consume the piadi pizza immediately. Piadinas can be stored inside a plastic food bag. They can also be frozen.
