Ingredients
- 3 eggs
- 3.5 oz dark chocolate
- 2/3 cup sugar
- 2 1/2 cup all-purpose flour
- 3.5 oz ricotta
- 1/3 cup coffee
- 1/3 cup vegetable oil
- 1 packet baking powder
How to Prepare the Ricotta Coffee and Chocolate Loaf Cake
In a large bowl, start by beating the eggs with the sugar and vanilla extract.
Mix well with a whisk for about 5 minutes or until the eggs become frothy. Continue by adding the ricotta, coffee, and oil.
Also incorporate the flour, baking powder, and chocolate chips.
Pour everything into a 12-inch greased and floured loaf pan and level with a spatula. Add the remaining chocolate and bake in a preheated oven at 350°F for about 45 minutes. Check the cooking with a toothpick; if it comes out dry, it is ready.
Storage and Variations on Ricotta Coffee and Chocolate Loaf Cake
The loaf cake can be kept under a cake dome for up to 3-4 days. If you don’t like chocolate, you can omit it. You can freeze it in single portions. For a crunchy note, you can add some nuts before baking.
