Risotto-style Pasta with Pumpkin is a simple recipe and truly irresistible comfort food. The preparation is similar to pasta with sausage and potatoes. If you love pumpkin recipes, you will also enjoy first courses with pumpkin. The particularity of the pasta with pumpkin lies in making the pumpkin creamy and cooking the pasta directly in the same pot while gradually adding hot broth. For a final touch of flavor, add scamorza cheese, but if you prefer, you can replace it with a creamy spreadable cheese like stracchino or Philadelphia. And to add crunch, you can omit the bacon and replace it with speck. For spices, let your imagination run wild: rosemary, sage, or basil, and for those who want to be bold, strong paprika, curry, or turmeric.

Variations and Tips for Risotto-style Pasta with Pumpkin
Instead of broth, you can simply use hot water. To reduce the sweetness of the pumpkin, add ingredients that neutralize the pungent flavor, such as sage, and parsley at the end of cooking along with a sprinkle of black pepper. When using spices, start with modest quantities and taste, adjusting the flavor as needed.
