Ingredients
- 1 roll shortcrust pastry
- 9 oz potato (boiled)
- 3.5 oz spicy salami
- as needed breadcrumbs
- 3.5 oz scamorza (sliced)
- as needed pumpkin seeds (sesame and poppy seeds)
How to Make Rustic with Potatoes and Salami
Clean and dice the potatoes, then boil them in salted water. It will take about 20 minutes from boiling.
Afterwards, place the potatoes in a bowl and season with extra virgin olive oil and rosemary.
Unroll the shortcrust pastry over a 10-inch pan and prick it with a fork, then sprinkle it with breadcrumbs. Fill with scamorza, then add the boiled potatoes and season with a pinch of salt, and grated cheese.
Fold the edges, brush with milk and garnish with seeds. Bake in the oven at 375°F for about 35-40 minutes. Add the slices of salami and place in the oven again for a few moments.
Storage and Tips for Rustic with Potatoes and Salami
It can be stored in the refrigerator in an airtight container until the next day. The potatoes must be cooked just right but still firm, if you don’t like spicy salami, you can use a milder version.
