- 10.5 oz fresh pork sausage, cooked in a pan (Luganega)
- 1.06 oz breadcrumbs
- as needed extra virgin olive oil
- as needed Parmesan
- as needed parsley
- 1/4 cup white wine

How to make Sausage-Stuffed Pepper Rolls
Wash the peppers, then cook them for 20 minutes at 392°F or until they appear well roasted. Alternatively, you can cook them in the air fryer for 20 minutes.
Once done, put them in a freezer bag and seal it.
Wait 10-15 minutes then open the bag. Remove the skin from the peppers, take out the seeds, and cut them into pieces to get a total of 8 fillets.
In the meantime, cook the sausage cut into pieces. Let it brown in a pan, deglaze with wine by cooking it for 6-7 minutes.
Fill each pepper slice with the sausage by rolling it up.
Place all the rolls in a well-oiled baking dish sprinkled with breadcrumbs, dress the surface with breadcrumbs, Parmesan, and oil.
Bake in a convection oven at 392°F for about 10 minutes.
Finally, take them out of the oven and serve the eggplant rolls still hot.
