Savory Pie with Pumpkin and Sausage, an easy and quick rustic dish to prepare, perfect to serve as an appetizer or as a light main course.
I love cooking with pumpkin, but this pie is really special and versatile. I used shortcrust pastry for the base, which can be replaced with puff pastry or crazy dough. Diced pumpkin, Umbrian sausage, and Brie cheese make this pie a real flavor spectacle, and it only takes 10 minutes to prepare. If you prefer, you can make it in advance and store it in the refrigerator until ready to bake. I baked it in the oven, but you can also use an air fryer. - 7 oz pumpkin (already cleaned)
- 3.5 oz Brie cheese
- 8.8 oz sausages

How to make Savory Pie with Pumpkin and Sausage
First, clean the pumpkin and then cut it into small cubes. Sauté a garlic clove with a drizzle of oil, add the pumpkin, and salt.
Season with rosemary and pour a little water. At this point, crumble the sausage and add it to the pan. Cook for about 7-8 minutes on high heat.
Meanwhile, as the pumpkin and sausage cook, unroll the shortcrust pastry over a baking pan with its parchment paper. Add the sautéed vegetables and Brie cheese.
Fold the edges and bake in a preheated oven at 356°F in static mode for about 25 minutes. Remove from the oven and serve in slices warm or at room temperature.
Storing the Savory Pie with Pumpkin and Sausage
The savory pie with pumpkin and sausage can be stored in the refrigerator in an airtight container until the next day. If you don’t like Asiago, you can use other cheeses like Gorgonzola, smoked scamorza, or provolone.
