Ingredients

  • 1 1/4 cups rice
  • 1/3 cup grated Parmesan
  • 3 1/2 oz scamorza cheese
  • 1 egg
  • to taste salt
  • 2 eggs
  • to taste breadcrumbs

How to Make Savory Rice Fritters

  • Start by boiling the rice in salted boiling water, then drain it and let it cool slightly. Next, season it with the grated Parmesan, egg, salt, and pepper.

  • Mix well to combine the ingredients.

  • After the cooling time, divide the rice into about 11-12 portions. Take one portion, slightly flatten it with your hands slightly moistened with water, giving it a round shape. Stuff the center with the scamorza.

  • Press slightly and form your fritters.

  • At this point, bread the fritters by first dipping them in beaten egg.

  • Then, coat them with breadcrumbs and cornmeal. (Repeat the operation if necessary).

  • For pan-frying, just add a drizzle of oil and cook your rice fritters over a lively flame.

  • When they are golden on both sides, turn off the heat and serve hot and cheesy, your savory rice fritters!

Storage of Savory Rice Fritters

If you doubled the recipe, you can freeze them, but before breading. For the filling, you can replace scamorza with mozzarella or Taleggio cheese. They can also be baked in a convection oven or air fryer at 356°F for about 15-20 minutes with a drizzle of oil on top.
