Ingredients
- 4 cups remilled durum wheat semolina flour
- 3 1/2 tbsp extra virgin olive oil
- 2 tsp salt
- 1 pinch baking soda
- 1 1/8 cup water
- 7 oz prosciutto
- 1 oz arugula
- 3 tomatoes
- as needed mayonnaise (yogurt-based)
- 1 Pan
How to make Semolina Flatbreads
As the first step, take a large bowl, pour in the flour, 1 pinch of baking soda, and the salt, then mix and make a well in the center.
Pour in the water and oil.
Transfer the mixture onto the table and continue kneading until it becomes a soft and compact dough.
Proceed by wrapping the dough with plastic wrap and let it rest at room temperature for at least 20 minutes.
Divide the dough into 5 parts and use a rolling pin to form the flatbreads.
As the last step, cook the flatbreads on a hot griddle or in a well-heated non-stick pan.
With the prongs of a fork, pierce them only when bubbles form.
The cooking time is about two minutes per side.
Repeat this operation until all ingredients are used up.

To further vary the flatbread dough, you can choose to mix different types of whole wheat flours. You can store the flatbreads in a plastic bag or freeze them.

How do you store flatbread?
Unfilled flatbreads are stored in a plastic bag outside the fridge for a maximum of 2 days. Alternatively, store them in a bag in the freezer for up to 30 days.
How to roll flatbread without breaking it?
Following my recipe, just roll it when still warm; otherwise, if you’re using packaged flatbreads, heat them for less than a minute.
