Ingredients

  • 1.32 lbs potatoes
  • 10.58 oz tuna
  • 3.53 oz black olives in brine
  • 1.06 oz Parmigiano Reggiano DOP
  • to taste extra virgin olive oil
  • 1 bunch parsley

How to make Sicilian potatoes

  • Start by peeling the potatoes, then slice them not too thick, aiming to make them all the same size.

  • Boil them in salted boiling water until they are soft but not overcooked.

  • Place the slices in a baking tray lined with parchment paper.

  • Add the tuna drained of its oil, the olives, the grated Parmesan, and a drizzle of oil, and cook at 356°F for about 15 minutes or until browned.

Storage and tips for Sicilian potatoes

Sicilian potatoes can be stored in the refrigerator in an airtight container until the next day. You can also add anchovy fillets. Remember to cut the potato slices all to the same size to avoid different cooking times. If desired, you can add a pinch of salt and a mix of pepper.
