Ingredients
- 4 1/3 cups all-purpose flour
- 2 tbsps extra virgin olive oil
- 2 tsp salt
- 2 tsp dry yeast
- 1 cup + 2 tbsps cups water
- 3.5 oz goat cheese
- to taste lettuce
- 2 tomatoes
- to taste dried oregano
- 7.75 oz cooked ham
How to Make Skillet Flatbreads
Pour the flour into a bowl, add the yeast and mix, at this point pour the warm water.
Also add the salt and oil, knead well with your hands until you form a smooth and homogeneous dough. Cover with plastic wrap and let rest for 1 hour.
After the resting time, roll out the dough with a rolling pin until you get a thickness of about 1/2 inch.
With a cookie cutter (or a glass) cut out small circles.
Next, cook them on a non-stick skillet, turning them on both sides.
Cut them in half and fill with cheese and cold cuts.
Storage and Substitutions for Skillet Flatbreads
Skillet flatbreads can be stored in a food bag until the next day, and they can be frozen. If you prefer, you can make a single portion as a single pie, perhaps filling it with sausages and spinach as is done in Umbria.
