- 1.1 lbs potatoes
- 1/2 cup flour
- 2 tbsps extra virgin olive oil (+ for greasing the skillet)
- 3.5 oz scamorza cheese
- 2 oz speck (if possible, diced small)

How to Make the Skillet Potato Cake
Wash and peel the potatoes, then blanch them for about 6 minutes in salted boiling water.
Afterwards, grate them with a coarse grater into a large baking dish.
At this point, add the flour, oil, and salt to the potatoes and mix everything well.
Heat a non-stick skillet with a drizzle of oil, then pour half of the mixture, fill with the speck and scamorza cheese cut into cubes.
Pour the other half of the potato mixture over the filling while the skillet continues to cook.
Cook on low heat, turning it on both sides until the surface is well browned.
Storing the Skillet Potato Cake
The skillet potato cake can be stored in the refrigerator in an airtight container until the next day. Variations can be made, such as air fryer cooking. Or you can add sliced and sautéed onions, along with grated Parmesan cheese.
